CRISPY MOZZARELLA STICKS

Plain Flour | 75g

Eggs | 2

Breadcrumbs | 120g

Mozzarella | 450g

Vegetable Oil

Tomato Pasta Sauce

Pesto Dip

< METHOD >

Place the flour, egg and breadcrumbs in separate shallow bowls. Line a baking tray with baking paper. Cut the mozzarella into 1.5cm-thick slices, then into sticks. Toss the sticks in flour, shaking off excess. Dip in egg, then roll in breadcrumbs, pressing firmly to coat. Transfer to the prepared tray. Place in the fridge for 20 minutes to chill. Pour enough oil into a frying pan to come 1cm of the way up the side. Heat over medium-high heat. Line a baking tray with paper towel. Working in batches, shallow-fry the sticks, turning, for 1 minute or until golden. Use a spoon to transfer to the prepared tray. Season with salt and serve warm, with pasta sauce and pesto dip.
