I think the reason there's no Ash-Pikachu may be simply because Pikachu hasn't reached his final evolutionary stage yet. If you think about it, the bond phenomenon between Ash and Greninja never happened when Greninja was in his Frogadier or Froakie form. So if Pikachu were to evolve into Raichu, we might see a similar transformation occur.
