If you read the manga then you'll know that there is a year time skip. During this time, Gumi mostly stayed at the restaurant and managed it while Tsukiyama was out helping Kaneki.
Gumi's appearance has changed as well. Her hair is now cut to shoulder length and she'll usually french braid it all back and tuck in the braid.
Other than that she'll mostly be wearing black dresses and dark clothes since she doesn't really go out in the morning anymore. She'll only be in disguise when she goes out to meet with Anteiku and occasionally when she sees Kaneki's group. And at random times when she wants to be lazy when dressing.
Currently the story is picking up, when Kaneki is about to attack the guest in the restaurant.
