You can see every color other than your soulmate's eye color. It is only when you look into their eyes for the first time, that you start to see the new color.
Bonus: In this world, people can be born with different colored eyes. Ex. Purple, gold, lime. It's also common for people to be born with different colors in one eye. Similar to segmental heterochromia:
