This depends on the book.
If it's your standard fanfiction with a pairing and stuff, chapters should be around 700+ words. I make a general rule of mine that they have to be at least 750 words and can't exceed 2,000.
On How-To books, like this one. I would say to try to keep it over 100 words but less then 1,200. Most How-To books have chapters that are 100-1000 but keeping it under 1,200 is a general rule.
That I don't always follow.

It really depends on the story. You can choose your own chapter lengths.
The purpose of the chapter is to tell you not to end HERE. I mean there are stories that have fanfics that end after 132 words.
It annoys the everliving fuck out of me.
I can tolerate 500 words but goddamn, if you make me wait for a chapter it better not be like 300 words of plotless bullshit.
