Remember that I said the diamonds fused into the moon goddess? Well Rose's tears would be more potent and powerful when she is fused. Pearls were once thought to be the tears of goddesses. I believe that after the war with the metals the moon goddess fusion cried over her lost comrades. The tears then became Pearls. The moon goddess' tears, thanks to Rose, had the power to create Pearls.
"Rose had the power to create sentient plant life to act as her defenders." As said by Pearl.
What if the moon goddess had the power to create sentient gems to act as her defenders? She's a fusion that contained Rose so it would stand to reason that the healing tears would become more powerful. That would explain why Pearl tries to jump in front of Rose, Steven, and even Garnet to protect them.
