CHICKEN MASALA BIRYANI.

Ingredients:-

Onion- 1 sliced.

Tomatoes - 3 medium sliced.

Fresh coriander chopped - 1/2 cup.

Mint leaves chopped - 1/2 cup.

Lemon juice - 2 tbs.

Cooking oil - 1 cup.

Onion sliced - 4 large.

Green cardamom - 3-4.

Black cardamom - 2-3.

Black peppercorns - 1/2 tsp.

Cloves - 6-7.

Cinnamon sticks - 2.

Bay leaf- 2.

Green chillies- 5-6.

Ginger garlic paste - 3 tbs.

Water - 1-2 tbs.

Coriander powder - 2 tbs.

Turmeric powder - 1 tsp.

Garam masala - 1 tsp.

Paprika powder - 1/2 tbs.

Red chilli powder - 1 & 1/2 tbs or to taste.

Salt - 1 tsp or to taste.

Chicken bones - 1 kg.

Basmati rice - soaked & boiled, until 3/4 h done)....

Mace powder - 1/4 tsp.

Nutmeg powder - 1/4 tsp.

Water - 1-2 tsp.

Orange food colour - 1/2 tsp or as required....

Method:-

In bowl, add onions, tomatoes, fresh coriander, mint leaves, Lemon juice mix well & set aside....

In pot, add cooking oil, onion & fry until golden brown & take out half quantity of fried onions & reserve for later use....

Add green cardamom, black cardamom, Peppercorns, cloves, cinnamon sticks, bay leaves, green chilli, & mix well.....

Add ginger garlic paste & cook for 2-3 minutes....

Add water & mix well....

Add onion & tomato mixture, mix well & cook until tomato are soft....

Add chicken & mix well until changes colour....

Cover & cook on low flame for 8-10 minutes, then cook on high flame, until oil seperates, & take out in a bowl..... 

In the same pot, add half layer of boiled rice, & spread it....

Add cooked chicken & add remaining rice & spread it....

Add cooked chicken & add remaining boiled rice....

Add mace powder & nutmeg powder....

In water, add yellow colour & mix well....

Add dissolve food colour, & fried onions , cover & steam cook on low flame for 10 minutes....
