Ingredients:-

Pav bhaji masala:-

Star anise - 1.

Black cardamom - 1.

Cloves - 8-10.

Cinnamon sticks - 1.

Button red chillies - 5-6.

Black Peppercorns - 1 tsp.

Coriander seeds - 2 tbs.

Cumin seeds - 1 tbsp.

Funnel seeds - 1/2 tbs.

Nutmeg - 1/2 pcs.

Mace - 1 piece.

Black salt - 2 tbsp.

Turmeric powder - 1 tbsp.

Dried mango powder- 1 & 1/2 tbsp.

Garlic - 6-7.

Ginger - 1 inch piece.

Kashmiri red chilli - soaked 2.

Water - 2 tbs or as required.

Cauliflower - chopped 1/2 cup.

Peas - 1/2 cup.

Capsicum - chopped 1/2 cup.

Carrot - 1/2 cup.

Tomatoes - 3 medium chopped.

Water - 1 & 1/2 cup or as required.

Potatoes - boiled & cubes 250 gms.

Salt - 1 tsp or to taste.

Prepared pav bhaji...

Spice mix -1 & 1/2 mix.

Butter - 2 tbs.

Cooking oil - 1 tbs.

Cumin seeds - 1 tsp.

Onion chopped - 1 medium.

Prepared pav bhaji-

Spice mix - 1 & 1/2 tbs or to taste.

Butter - 2 tbs.

Cooking oil - 1 tbs.

Butter - 3-4 tbs.

Cumin seeds - 1 tsp.

Onion chopped - 1 medium.

Prepared pav bhaji mix to taste.

Dry Fenugreek leaves - 1 tsp.

Lemon juice - 1 tbsp.

Butter - 1 tbs.

Method:-

In frying pan, add star anise, black cardamom, cloves, cinnamon sticks, button red chilli, black Peppercorns, coriander seeds, cumin seeds, Funnel seeds, nutmeg , mace, & roast until fragrant & let it cool.....

In spice mixer, add roasted spices, and grind well....

Add black salt, turmeric powder, dry mango powder, grind until coarse powder... Pav bhaji spice mix is ready.....

In spice mixer add garlic, Ginger, kashmiri red chillies, water grind to make a paste, & set aside.....

In pot, add cauliflower, peas, capsicum, carrot, tomatoes & water, mix well & bring it to boil, cover & cook on low flame for 15-20 minutes.....

Add potatoes, salt, prepared pav bhaji spice mix, grinded chilli paste, & mash well with the help of masher.....

Add butter mash again, & cook for 5 minutes, & take out in a bowl & set aside.....

In the same pot, add cooking oil, butter & let it melt....

Add cumin seeds, onion, mix well & saute until translucent.....

Add remaining grinded chilli paste & mix well.....

Add prepare pav bhaji spice mix & mix well.....

Add cooked & mashed vegetables & mix well....

Add dried Fenugreek leaves, lemon juice & mix well....

Add butter, cover & cook on low flame for 2-3 minutes....

Garnish with onion, green chilli, butter , lemon slices, & serve....
