This is the list of official rwby references from the Wikipedia page. Lets see how close I got with my speculations.

Team RWBY:

Ruby rose:
Ruby alludes to the tale of Little Red Riding Hood. (Obvious one)

Weiss schnee:
Weiss alludes to Snow White, as her full name is German for "White Snow". (Bullshit, first of all this is the way you write white in switzerland; you write it different in german. Secondly, I still think my theorie holds up better.)

Blake belladonna:
Belladonna is an allusion to Belle (French term for beauty) of Beauty and the Beast.It is also an allusion to Deadly Nightshade (Atropa Belladonna), which is as the name suggests is deadly but also can cause hallucinations which are similar to her semblance.Her name, "Blake", is an Old English term for black.

Yang xiao long:
Yang is an allusion to Goldilocks; her name in Chinese is 陽小龍 and translates to "sun little dragon".

Team JNPR:

Jaune arc:
His name is derived from the French heroine Joan of Arc, and his theme color is based on his name "Jaune", which is the French word for the color yellow.

Nora valkyrie:
Her first name comes from the Nora Barlow Columbine, while her last name, "Valkyrie", is inspired by the female warriors found in Norse mythology. She alludes to the Norse god Thor. (I knew it)

Pyrrha Nikos:
She is named after the Greek mythological figure, and her last name is derived from the goddess Nike. She also takes inspiration from Achilles from Homer's The Iliad.

Lie ren:
While his name in Chinese (猎人) translates to "huntsman", Ren (蓮) is also Japanese for "lotus", which is his emblem. He is inspired by the legendary Chinese warrior Hua Mulan.

Team CRDL:

Each member of Team CRDL has a bird motif.

Cardin winchester:
While his name comes from the cardinal bird and the Winchester line of guns, it also references the Cardinal of Winchester who presided over the Trial of Joan of Arc.

Russel Thrush:
His last name comes from the thrush bird.

Dove bronzewing:
He is named after the bird often used as a symbol for peace, and his last name is a reference to a pigeon of the same name.

Sky lark:
His full name is derived from the larks of the Alauda genus.

Team CVFY:

Coco adel:
Her name is theorized to be based on Coco Chanel.

Fox Alistair:
He is named for the small canine often hunted for sport.

Velvet Scarlatina:
Her name is derived from "The Velveteen Rabbit".

Yatsuhashi Daichi:
His name comes from the Japanese treat of the same name, and his name was revealed in a series of tweets of the treat by Monty culminating in a singular image of Yatsuhashi Kengyo along with the phrase "You'll figure it out" as an obvious hint that the character is named in honor of the latter.

Team SSSN:

Each member of Team SSSN has a Big Bang motif.

Sun Wukong:
Sun alludes to the character of the same name from Journey to the West.

Scarlet David:
His outfit is an allusion to G-Dragon of Big Bang and is based on the character Peter Pan, specifically from Peter Pan in Scarlet.
