We had fish and chips for supper tonight.
We used caribe potatoes that we harvested from the garden last summer; caribe is a variety with a white crispy flesh and medium purple skin. They're my mom's favorite kind. They fry really well, and cook perfectly. We fried them in canola oil, and seasoned them with a homemade mixture of a bunch of different spices. It gives off a smokey BBQ flavour.
The fish was store-bought cod, already breaded. They just needed to go in the oven for a half hour, turning once. They came out crispy, and wonderful, while being light on the inside.
I also made a tartar sauce, sort of; I used mayonnaise, homemade dill pickles that were diced, some pickle juice, homemade hotdog relish, and some dried dill weed spice. I added too much pickle juice, though, and it was a bit liquidy. It was still tasty with the fish; it soaked up the sauce pretty good.
Everybody likes their own dip with the fries: my brothers love ketchup, my dad just used the tartar sauce, and my mom used mayonnaise. I used sour cream, and I sprinkled parmesan cheese on top of the fries. It kind of made it appear fancy, although all it was was just fish and chips.
All in all, pretty good. Very filling food. A nice and quick meal.
