The morning went by quicker than anticipated. I had a craving for something nice for breakfast, as I had to stay with my brothers all day – they both have autism, and if I can do something nice for them to show I care, then I'll do it.
So I made breakfast perogies.
They're not authentic by any means, but they turned out pretty good. Mom and I got a pasta machine as a joint Christmas gift, so we didn't have to get anything else for each other. In the book that comes with it, there's a basic dough recipe – one egg for one cup of flour – and I added italian seasoning to the mix. Rolled it out thin, cut them into circles. I scrambled up some eggs and thinly diced onion for the filling. Then I used little dumpling makers to make the perogies.
They made a pretty big plateful. I sprinkled parmesan cheese on top, and served it with sour cream.
It was delicious.
And the boys seemed to really enjoy it, too. Which made everything better. Maybe tomorrow, we'll make chocolate chip pancakes.
