INGREDIENTS:
⚫3 cups all purpose flour
⚫2 teaspoons baking powder
⚫2 teaspoons ground cinnamon
⚫1 teaspoon ground ginger
⚫¾ teaspoon ground nutmeg
⚫¼ teaspoon salt
⚫1 cup butter, melted
⚫2 cups granulated sugar
⚫4 large eggs
⚫4 teaspoons vanilla extract
⚫1 cup milk
⚫2 cups grated carrots
⚫1 cup chopped walnutsCoconut Milk Icing:
⚫2 cups powdered sugar,sifted
⚫¼ cup + 2 tablespoons coconut milkINSTRUCTIONS:
1. Pre-heat oven to 350 degrees Fahrenheit.
2. Grease and flour a cake pan, set aside.
3. In a bowl add flour, baking powder, cinnamon, ginger, nutmeg and salt and mix to combine .
4. In a large bowl, cream together melted butter and sugar, then add eggs, one by one, and beat well in between each addition.
5. Add vanilla and beat to combine, with a spatula or wooden spoon fold in flour alternating with milk,starting and ending with flour.
7. Stir in with a spatula or wooden spoon fold in flour alternating with milk mixing well after each addition
8. Stir in grated carrots and walnut, pour onto your prepared cake pa . Bake for 50 minutes to 1 hour or until a toothpick inserted in comes out clean.
Make icing:
Add the powdered sugar and coconut milk to a medium sized bowl and whisk until smooth, set aside9. Let cool in pan for 10. minutes then transfer to a wire rack tp cool completely.
10. Pour the icing over the cake,slice and enjoy!
