According to the legend, once Lord Ganapati was getting his sister-in-law to tie the thread of protection and the gift transaction was going on.  Then his sons asked Ganesh ji about this ritual.  Then Ganesha said that this thread is not a thread, but Rakshasutra is a symbol of blessings and love of brother and sister.  Hearing this, Shubh and labh got very excited and he told Ganesh ji that he also wants a sister, so that he too can get this Rakshasutra tied.

In order to fulfill this wish of their sons, Lord Ganesha created a flame from his powers and merged it with the soul power of both the wives Riddhi-Siddhi.  After some time this Jyoti took the form of a girl, whose name was Santoshi.  Since then that girl came to be known as Santoshi Mata.  Since Santoshi Mata was born on Friday, so her worship and fasting are done on Fridays only.
