Peridot relies heavily on her limb enhancers for various tasks (information, transportation, etc.) I think she probably can't fight without them either, and has probably never materialized a weapon from her gem. (The visor covering up her forehead doesn't particularly help for easy access to that, either.)
Steven, having mastered how materialize his shield, teaches Peridot how to summon her weapon.
