If you watch closely during the episodes when Peridot appears, you notice that she's not very advanced with everything.
The first time you uses the arm cannons, she seems surprised that it even works. When she gets away with her arms using them as blade on a helicopter, she seems unsteady.
And even the gestures she made was from copying Steven, not from Homeworld and the only real verbal attachment she has to Homeworld is the insult 'clod'.
I think that she's just been made for this one mission, and this is her first. She's immature and stubborn because she's practically a newborn. She's just trying to find her place in the world.
