Makes for 1 loaf/ 24 muffins
Ingredients:
4 overripe bananas
1 cup of brown sugar
1 1/2 sticks of butter
2 eggs
1 teaspoon of vanilla extract
2 cups of flour
1 1/2 teaspoons of baking soda
1 pinch of salt
1/2 cup of chopped pecans
Preparation
1. Preheat the oven for 375 degrees and place cupcake liners in muffin tins.
2. Puree 2 bananas in a blender then add it to a bowl of sugar. Whisk until they are combined. Add the butter, eggs, and vanilla and beat them with the sugar mixture.
3. Combine them with the flour, baking soda, and salt.
4. Mash the other two bananas in a separate bowl with a fork to help give it more texture. Fold it into the batter with the pecans.
5. Bake for 18 minutes and then let the muffins cool.
(For the Bread part, all you need to do is pour the batter in a greased loaf pan and let it bake for 45 minutes)
