Makes for 16 servings
Ingredients:
Chocolate Cupcake
1/4 vegetable oil
1 cup of sugar
1 egg
1/2 teaspoon of vanilla extract
7/8 cup of flour (1/2 cup + 1/4 cup + 2 tablespoons)
1/3 cup of cocoa powder
1 teaspoon of baking soda
1/2 teaspoon of baking powder
1/4 teaspoon of salt
1/2 cup of brewed coffee
1/2 cup of buttermilk
Strawberry Frosting
3 sticks of butter
6 cups of powdered sugar
1/3 cup of strawberry coulis
3 tablespoons of strawberry jam
Decoration
Sliced strawberries
1/2 cup of melted chocolate
Preparation:
1. Preheat the oven for 350 degrees. Place some cupcake liners in a cupcake pan.
2. Place the oil and sugar in a bowl and mix until it is combined. Then add the egg and vanilla and mix again.
3. Combine the flour, cocoa powder, baking soda and powder, and salt in a separate bowl.
4. Divide the flour mixture into thirds and add it into the sugar mixture while adding the coffee and buttermilk in between.
5. Place the cake batter into the cupcake liners and bake for 23 minutes.
6. Let the cupcakes cool.
7. In a medium bowl, beat together the butter and jam.
8. Gradually add the powdered sugar and strawberry coulis continuously beating until all the ingredients have been incorporated and the frosting is light and fluffy.
9. Use a star-piping tip for the piping bag and fill the bag with frosting. Frost each individual cupcake by starting at the middle and working the way around the cupcake to reach back in the middle.
10. Dip the lower part of the strawberries in milk chocolate and place on top of each individual cupcake.
