Makes for 8 Servings
Ingredients:
Cake
1/3 cup of margarine
3/4 cup of sugar
1 egg
1 1/2 teaspoons of vanilla extract
1 1/2 cups of flour
2 1/2 teaspoons of baking powder
1/2 teaspoon of salt
3/4 cup of milk
Frosting
1 stick of butter
3 oz of melted chocolate chips
1/2 teaspoon of vanilla extract
2 cups of powdered sugar
2 tablespoons of milk
Mousse
1/4 cup of heavy cream
1 tablespoon of powdered sugar
1 oz of melted chocolate chips
Preparation:
1. Preheat the oven for 375 degrees. Grease two 6 inch round pans and align them with parchment paper.
2. Place the margarine into the bowl. Add sugar to the bowl and mix until it is completely creamed. When mixed, add the egg and vanilla extract and mix.
3. Then combine the flour, baking powder, and salt in a seperate bowl
4. Divide the flour mixture into thirds and add it into the butter mixture while adding the milk in between.
5. Place the cake batter into the cake pans and bake for 25 minutes.
6. Let the cakes cool.
7. In a medium bowl, beat together the butter, chocolate, and vanilla.
8. Gradually add in the powdered sugar and milk, continuously beating until all the ingredients have been incorporated and the frosting is light and fluffy.
9. In a small bowl, beat the heavy cream and powdered sugar until it forms into whipped cream. Then fold in the chocolate.
10. Set out the first layer of the cake and pipe a border of frosting around the edges to add stability and secureness for the mousse.
11. Place the mousse in the middle and spread it out for it to be even, and then place the top layer of cake on top.
12. Frost the entire cake with the rest of the frosting, and then decorate to your liking.
