Makes for 30 bites
Ingredients:
7 graham cracker
3 tablespoons of sugar
6 tablespoons of melted butter
12 oz. of cream cheese
3/4 cup of powdered sugar
1 teaspoon of vanilla extract
1 1/2 cups of milk chocolate
4 oz. of white chocolate
Preparation:
1. Place the graham crackers in a food processor and pulse until they become fine crumbs. Slowly add in the sugar and butter until the graham cracker mixture has been completely wet.
2. Place the graham cracker mixture in an 8x8 inch cake pan that has been greased and aligned with parchment paper. Press down on the mixture until it is even. Freeze for 10 minutes.
3. In a bowl, combine the cream cheese, powdered sugar, and vanilla. Whisk till it has fully combined.
4. Spread the cream cheese mixture on the graham cracker crust. Freeze for a few hours.
5. Melt the milk chocolate In a double boiler. Take the bowl off the pot and let the chocolate cool for a second
6. Transfer the cheesecake to a cutting board and cut them from 8 cuts across and 6 down, making cheesecake cubes.
7. Place each individual cheesecake bites in the chocolate and fully cover them in chocolate. Make sure to drip off the access. Set them on a tray align with parchment paper and refrigerate them until the chocolate shell has hardened. Repeat with the remaining bites.
8. While they harden, place the white chocolate in a double boiler and let it melt. Transfer the melted chocolate in a squeeze bottle. (Make sure it's secure) Take the cheesecake bites out and make a diagonal line pattern on each individual cube. Chill them one more time. (Since they do have cream cheese, make sure they stay chilled if they won't be eaten right away)
