Makes for 8 Servings
Ingredients:
4 chicken breasts, cubed
1 pinch of salt and pepper
4 cloves of garlic, minced
1 tablespoon of minced ginger
4 cups of water
2 cups of white, long-grained rice
1 cup of soy sauce
2 tablespoons of rice vinegar
1/2 cup of honey
2 to 3 teaspoons of paprika
1/4 cup of water
1 tablespoon of cornstarch
Scallions, for garnish
Preparation:
1. Season the chicken cubes and sauté the chicken until it is cooked all the way through.
2. Add the garlic and ginger and sauté them until they become soft and their flavors get brought out.
3. Add the 4 cups of water and rice and stir.
4. Cover the pot and bring the water to a boil
5. Then reduce the heat and let the water simmer for 15 minutes without removing the lid.
6. Add the soy sauce, vinegar, honey, and paprika. Stir to combine.
7. Combine the 1/4 cup of water with the corn starch to create a slurry. Add it to the pot with the broccoli and carrots and stir until the sauce thickens.
8. Garnish with scallions.
