Makes for 4 Servings
Ingredients:
1 cup of cooked rice
3 chicken breasts, sliced
4 cloves of garlic, minced
1/2 diced onion
2 minced garlic cloves
2 teaspoons of curry powder
1 pinch of salt and pepper
1 cup of chicken broth
1 can of coconut milk
1 1/2 tablespoons of honey
1/8 teaspoon of cayenne pepper
1/4 cup of water
2 tablespoons of cornstarch
Preparation:
1. Fry the chicken in a pan with a little bit of oil in them. When the chicken is close to 150 degrees, add the onion and garlic so they can saute and brown a bit.
2. Add the curry powder, salt, and pepper and sauté them until they become soft and their flavors get brought out.
3. Add the chicken broth, coconut milk, honey, and cayenne and stir.
4. In a small measuring cup, add the water and cornstarch and mix until it becomes a slurry. Add it to the curry and stir until it has combined.
5. Serve over cooked riced with some pita bread.
