Makes for 3 Servings
Ingredients:
8 oz of mushroom
1 clove of minced garlic
1/4 teaspoon of thyme
1 pinch of salt and pepper
2 tender sirloin cuts
2 tablespoon of BBQ sauce
2 ham slices
1 sheet of puff pastry
1 egg
Preparation:
1. In a food processor, place in the mushrooms, garlic, salt, pepper, and thyme. Pulse it into it becomes a paste
2. Transfer it to a pan and cook the mushrooms and let them sauté. Set them aside.
3. Preheat the oven for 400 degrees.
4. Season the steaks on both sides. Sear them on both sides enough for them to have a slight char, not long enough to actually cook them all they way through.
5. Once the steaks have been seared, paint the BBQ sauce on both sides of the steak.
6. Roll out the puff pastry and cut them in half for each steak. Place a slice of ham in the center of the dough. Then place 1 tablespoon of the mushroom mixture on the ham and use a spoon to flatten it and spread it evenly. Place each filet on the ham and spread the rest of the mushroom on top the steaks.
7. Seal the edges the pastry to enclose on the steak. Then flip it over and place them in a baking sheet that is aligned with parchment paper.
8. Brush each of the pastry's with egg wash.
9. Use a paring knife to cut the pasty's in a checkered-like pattern.
10. Bake for 20 minutes.
