~Strawberries N' Cream Cupcakes

Makes for 18 cupcakes

Ingredients:

Cake

1 cup of diced strawberries

2 tablespoons of flour

1/3 cup of shortening

3/4 cup of sugar

1 cup + 2 tablespoons of flour

1 3/4 teaspoons of baking powder

1/2 teaspoon of salt

2/3 cup of milk

1/2 teaspoon of vanilla extract

3 egg whites

Frosting

2 sticks of butter

4 cups of powdered sugar

1/4 cup of strawberry coulis

2 tablespoons of strawberry jam

Preparation:

1. Preheat the oven for 350 degrees. Place some cupcake linears in a cupcake pan.

2. Diced up the strawberries and place them in the 2 tablespoons of flour so that they will be dry.

3. Place the shortening into the bowl. Add sugar to the bowl and mix until it is completely creamed.

4. Then combine the flour, baking powder, and salt in a seperate bowl

5. Divide the flour mixture into thirds and add it into the butter mixture while adding the milk and vanilla in between.

6. Whip the egg whites until they form soft peaks. Then fold them in with the strawberries in the cake batter.

5. Place the cake batter into the cupcake linears and bake for 20 minutes.

6. Let the cupcakes cool.

7. In a medium bowl, beat together the butter and jam

8. Gradually add in the powdered sugar and strawberry coulis continuously beating until all the ingredients have been incorporated and the frosting is light and fluffy.

9. Use a rosette pipping tip for the pipping bag and fill the bag with frosting. Frost each individual cupcake by starting to pipe at the middle and circle it around to create a rose look.
