Makes for 8 Servings
Ingredients:
Cake
1/2 cup of margarine
3/4 cup + 2 tablespoons of sugar
1 egg
1/2 teaspoons of vanilla extract
1 1/4 cups of flour
1/2 teaspoons of baking soda
1/2 teaspoon of salt
3/4 cup of milk
1 teaspoon of vinegar
1 1/2 teaspoon of cocoa powder
3 to 4 teaspoon of red food coloring
Frosting
8 oz of cream cheese
1 stick of butter
1 teaspoon of vanilla extract
4 cups of powdered sugar
Red Sprinkles
Preparation:
1. Preheat the oven for 350 degrees. Align a muffin tin with cupcake liners.
2. Place the margarine into the bowl. Add sugar to the bowl and mix until it is completely creamed. When mixed, add the egg and vanilla extract and mix.
3. Then combine the flour, baking soda, and salt in a seperate bowl
4. Divide the flour mixture into thirds and add it into the butter mixture while adding the buttermilk in between.
5. In a small bowl, mix the vinegar, cocoa powder, and red food coloring. Mix together until the cocoa powder has been saturated. Add it to the cake batter and stir. If you don't think you have enough food coloring, you can add more and stir.
6. Scoop the batter into the cupcake liners. Bake them for 20 minutes.
7. Let the cupcakes cool.
8. In a medium bowl, beat together cream cheese, butter, and vanilla.
9. Gradually add in the powdered sugar continuously beating until all the ingredients have been incorporated and the frosting is light and fluffy.
10. Place the frosting in a piping pipe with a round tip. Frost each of the cupcakes by piping from the middle and working your way around the cupcake back to the middle.
11. Top it off with red sprinkles. (Or anything else you like with it)
