Makes for 4 Servings
Ingredients:
2 zucchinis
1/4 to 1/2 Ib of spaghetti
2 tablespoons of butter
3 cloves of minced garlic
1 pinch of salt and pepper
1 1/4 cups of heavy cream
1/3 cup of Parmesan cheese
3 to 4 diced cherry tomatoes, for garnish
Preparation:
1. Boil the spaghetti until they are the texture of al dente.
2. Using a mandoline, turn each of your zucchinis into noodles and nuke them in the microwave for 1 and a half minutes before adding them to your sauce.
3. For the alfredo, melt the butter in a pan. Then add the garlic to sauté and season it with salt and pepper. Once the garlic is translucent, add the cream and stir until it is incorporated.
4. Add the Parmesan cheese to the sauce and stir until the cheese has melted. Then add the regular noodles and the zoodles to the sauce and toss them in your pan so the sauce can coat the noodles.
5. Garnish your pasta with the diced tomatoes to give it color, if desired.
