Makes for 8 to 10 Servings
Ingredients:
2 cups of sugar
1 cup of corn syrup
1 cup of water
1 tablespoon of butter
2 cups of Spanish peanuts
1 teaspoon of water
1 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon of vanilla extract
Preparation:
1. Combine the sugar, syrup, 1 cup of water and butter in pan and cook on medium until the sugar dissolves.
2. Add the peanuts and cook until it is between the soft and hard crack stage, but stir constantly.
3. Remove from heat and add the 1 teaspoon of water, soda, salt, and vanilla. Mix until it is combined.
4. Spread the candy in a baking pan that is coated with butter and salt. Let it cool, then take the brittle off the pan and break them into large bits.
