Makes for 4 servings

Ingredients:

1 pint of heavy cream

1 teaspoon of vanilla extract

5 egg yolks

1/3 cup of superfine sugar, plus extra for the crust

Preparation:

1. Preheat the oven for 325 degrees

2. Pour the cream and vanilla in a saucepan and let it come to a very light boil

3. Place the egg yolks in a separate bowl with some sugar and whisk it for 5 to 10 minutes until the color of the mixture becomes pale.

4. Temper the egg mixture with the hot cream, then add the egg mixture with the cream and cook until it becomes a thick custard.

5. Pour the custard through a mesh strainer.

6. Place the cream into four separate ramekins for about three-quarters full and place the ramekins in water bath with very hot water. Bake for 35 minutes.

7. Chill the custards for about 2 hours.

8. When ready to serve, sprinkle some of the superfine sugar on top of the custard and use a blowtorch to melt the sugar to become a hard crust.
