Makes for 16 servings
Ingredients:
Chocolate Chip Cupcake
1 stick of butter
3/4 cup of sugar
2 eggs
1 teaspoon of vanilla extract
1 1/4 cups of flour
1 teaspoon of baking powder
1 pinch of salt
1/2 cup of milk
1/3 cup of chocolate chips, half up them chopped into smaller pieces
Cookie Dough Mousse
3/4 cup of heavy cream
1/4 cup of brown sugar
1 teaspoon of vanilla extract
Frosting
2 sticks of butter
1 teaspoon of vanilla extract
4 cups of powdered sugar
2 to 3 tablespoons of milk
Decorations
Quartered Chips Ahoy Cookies
Milk Chocolate chips
Preparation:
1. Preheat the oven for 350 degrees. Place some cupcake liners in a cupcake pan.
2. Place the butter and sugar in a bowl and mix until it is combined. Then add the eggs and vanilla and mix again.
3. Combine the flour, baking powder,and salt in a separate bowl.
4. Divide the flour mixture into thirds and add it into the sugar mixture while adding the milk in between. Fold the chocolate chips into the batter.
5. Place the cake batter into the cupcake liners and bake for 23 minutes.
6. Let the cupcakes cool.
7. Whip the heavy cream, brown sugar, and vanilla in a bowl and whip them until the cream becomes whipped.
8. Cut a hole into the top of the cupcakes and press down to make a well for the mousse.
9. Pipe the mousse into the cupcakes.
10. In a medium bowl, beat together the butter and vanilla
11. Gradually add the powdered sugar and milk continuously beating until all the ingredients have been incorporated and the frosting is light and fluffy.
12. Use a star-piping tip for the piping bag and fill the bag with frosting. Frost each individual cupcake by starting at the middle and working the way around the cupcake to reach back in the middle.
13. Top the cupcake off with the chips ahoy cookie and some milk chocolate chips.
