~Tomato Chickpea Curry

Makes for 4 Servings

Ingredients:

1/2 diced onion

3 minced garlic cloves

1 tablespoon of minced ginger

1 tablespoon of curry powder

1 can of coconut milk

10 oz of tomato sauce

1/4 cup of vegetable stock

1/4 teaspoon of salt and pepper

1 can of rinsed chickpeas

Preparation:

1. In a large pan, place some oil in there and cook the onions, garlic, and ginger until they become translucent. Add the curry powder to the onion mixture and mix.

2. Pour in the coconut milk, tomato sauce, stock and stir.

3. Rinse out the chickpeas and at them to the curry. Season them with salt and pepper.

4. Simmer for 20 minutes and pour over rice.
