~Lemon Strawberry Cake

Makes for 8 Servings

Ingredients:

Cake

6 tablespoons of butter

3/4 cup of sugar

1 1/2 zests from lemons

2 eggs

1 3/8 cups of flour (1 cup + 1/4 cup + 2 tablespoons)

1 tablespoon of corn starch

1/4 teaspoon of salt

3/4 teaspoon of baking powder

1/4 teaspoon of baking soda

1/2 cup of milk

2 tablespoons of vegetable oil

1/3 cup of lemon juice

Strawberry Curd

8 oz. of strawberries

2 egg yolks

1/3 cup of sugar

1 tablespoon of cornstarch

2 tablespoons of lemon juice

1 pinch of salt

Strawberry Frosting

2 sticks of butter

4 cups of powdered sugar

1/4 cup of strawberry coulis

2 tablespoons of strawberry jam

Preparation:

1. Preheat the oven for 350 degrees. Grease two 6 inch round pans and align them with parchment paper.

2. Place the butter into the bowl. Add sugar to the bowl and mix until it is completely creamed. When mixed, add the eggs and lemon zest and mix.

3. Then combine the flour, corn starch, baking powder, baking soda and salt in a seperate bowl

4. Divide the flour mixture into thirds and add it into the butter mixture while adding the milk, oil, and lemon juice in between.

5. Place the cake batter into the cake pans and bake for 25 minutes.

6. Let the cakes cool.

7. In a medium bowl, beat together the butter and strawberry coulis.

8. Gradually add in the powdered sugar and jam, continuously beating until all the ingredients have been incorporated and the frosting is light and fluffy.

9. Heat the 8 oz of strawberries in a saucepan with a bit of water until the strawberries have been cooked down. Strain liquid from the seeds through a mesh strainer.

10. In a separate bowl, whisk the yolks, sugar, starch, juice, and salt until it is smooth and has lightened in color and pale.

11. Add the strawberries little by little to temper the heat of the egg mixture. Then add the entire curd to the saucepan on low heat and cook till the texture of the curd becomes thick. Let it cool once it has cooked to the right consistency.

12. Let out the first layer of the cake and pipe a border of frosting around the edges to add stability and secureness for the curd.

13. Place the curd in the middle and spread it out for it to be even, and then place the top layer of cake on top.

14. Frost the entire cake with the rest of the frosting, and then decorate to your liking.
