Makes for 24 turtles
Ingredients:
Caramel
1 cup of brown sugar
1/2 cup of half in half
1/2 stick of butter
1/4 teaspoon of salt
2 teaspoons of vanilla extract
Turtles
24 pecan halves
24 mini pretzel twists
1 package of milk chocolate
Preparation:
1. Preheat the oven for 325 degrees.
2. Place the ingredients for the caramel in a small pot and heat it up while stirring the candy mixture around. Place a candy thermometer in and keep heating it up and stirring it until the temperature gets to a soft ball.
3. Place the pecans in a baking sheet and roast in the oven for 5 minutes to bring out the flavor of the nuts
4. Align a pan with pretzels and place a tablespoon of caramel on the pretzels and let it sit there until the caramel firms up a bit.
5. Place each individual pecan on each caramel-pretzel.
6. Align another pan with parchment paper. Place dollops of melted milk chocolate on the parchment paper, about 2 teaspoons. Place the pretzel on the chocolate before it firms up. Let it chill for 30 minutes.
