Ingredients:
1¼ cups gluten free self-raising flour
¼ cup brown rice flour
2 tablespoons caster sugar
1 cup milk
3 eggs
40g butter, melted
2 large bananas, sliced thickly
¼ cup brown sugar
Cooks Tools:
Sieve
Medium bowl
Whisk
Wooden spoon
Measuring jug/cups/spoons
Frying pan
Spatula
Cutting board
Step 1: Sift flours and sugar into medium bowl. Whisk eggs, milk and half the butter in medium jug. Gradually whisk mixture into flour mixture until smooth.
Step 2: Heat large heavy-based frying pan over medium heat; brush with a little of the remaining butter. Pour 2 tablespoons batter for each pancake into a heated pan. Cook pancakes until bubbles appear on the surface; top pancakes with banana, and sprinkle each pancake with a rounded teaspoon of brown sugar.
Step 3: Flip pancakes over; cook until sugar has caramelised and banana is browned lightly. Cover to keep warm.
Step 4: Repeat process to make a total of 12 pancakes, wiping out pan between each batch.
