Ingredients:
2 eggs
2 tablespoons icing sugar
2 teaspoons finely grated lemon rind
¼ cup plain flour
¼ cup self-raising flour
75g unsalted butter, melted
1 tablespoon lemon juice
2 tablespoons icing sugar, extra
Step 1: Preheat oven to 200°C. Grease 22 holes of two 12-hole madeleine trays with a little butter.
Step 2: Beat eggs, caster sugar, icing sugar and rind in small bowl with electric mixer about 8 minutes or until pale and thick.
Step 3: Meanwhile, triple-shift flours: sift flour over egg mixture. Pour butter and juice down the side of the bowl then fold in ingredients together.
Step 4: Drop rounded tablespoons of mixture into pan holes.
Step 5: Bake madeleines about 10 minutes. Tap hot pan firmly on bench to release madeleines: turn immediately onto baking paper covered wire racks to cool.
Step 6: Serve dusted with extra sifter icing sugar.
