Waffles with Maple Syrup

Ingredients:

200g dairy free spread

¾ cup caster sugar

1 teaspoon vanilla extract

3 eggs, separated

1¼ cups potato flour

1 cup brown rice flour

1 teaspoon gluten free baking powder

1 cup water

Cooking oil spray

2 teaspoons pure icing sugar

1 cup pure maple syrup

Cooks Tools:

Measuring cups/spoons

Medium bowl

Electric mixer

Small bowl

Waffle iron

Plate

Step 1: Beat spread, caster sugar and extract in medium bowl with electric mixer until light and fluffy. Beat in egg yolks one at a time.

Step 2: Beat egg whites in a small bowl with electric mixer until soft peaks form; fold into egg yolk mixture.

Step 3: Fold in sifted dry ingredients and water. Do not over-mix (mixture may look slightly curdled).

Step 4: Spray heated waffle iron with cooking oil; pour ½ cup batter over bottom element of waffle iron. Close iron; cook waffle about 3 minutes both sides and crisp. Transfer waffle to plate; cover to keep warm. Repeat with cooking oil and remaining batter to make a total of 12 waffles.

Step 5: Serve waffles dusted with icing sugar and drizzled maple syrup.
