Ingredients:
¾ cup flaked almonds
3 eggs whites
½ cup caster sugar
1 tablespoon cornflour
1 teaspoon finely grated orange rind
¾ cup dried cranberries
1 tablespoon pure icing sugar
Cooks Tools:
Measuring cups/spoon
Oven trays
Baking paper
Medium frying pan
Small bowl
Whisk
Wooden bowl
Medium bowl
Sieve
Wire rack
Step 1: Preheat oven to 160°C/140°C fan forced. Grease oven trays; line with baking paper.
Step 2: Dry roast nuts in medium frying pan until browned lightly, remove pan.
Step 3: Beat egg whites in small bowl with electric mixer until soft peaks form. Gradually add sugar, beating until sugar dissolves; transfer to medium bowl. Fold in sifted cornflour, rind, cranberries and nuts, in two batches.
Step 4: Drop heaped tablespoons of mixture about 4cm apart onto trays; bake about 30 minutes. Stand on tray 5 minutes before transferring to wire rack to cool. Dust with sifted icing sugar to serve.
