Caramel Walnut Slice

Ingredients:

1 cup self-raising flour

1 cup desiccated coconut

½ cup caster sugar  

125g butter, melted

Coconut Walnut Topping:

2 eggs, beaten lightly

1 teaspoon vanilla extract

1 cup desiccated coconut

¾ cup firmly packed light brown sugar

½ cup coarsely chopped walnuts

Step 1: Preheat oven to 180°C. Grease 20cm x 30cm slice pan; line with baking paper, extending paper 5cm over long sides.

Step 2: Combine sifted flour, coconut and sugar in medium bowl; stir in butter. Press mixture into pan. Bake 15 minutes.

Step 3: Make coconut walnut topping. Spread topping over base.

Step 4: Bake a further 20 minutes. Cool slice in pan before cutting.

Combine eggs and extract in medium bowl; stir in coconut, sugar and walnuts.
