Chicken Burritos With Salsa

Ingredients: Burrito

100g cooked chicken

½ onion diced

2 teaspoons chilli sauce

3 teaspoons cornflour

150mL light evaporated milk

1 burrito

Lettuce shredded

½ tomato

Diced

½ avocado chopped

Salsa:

¼ cup fresh coriander leaves

¼ red onion

½ clove garlic crushed

½ diced tomato

½ fresh red chilli

Cooks Tools:

Measuring cups/spoons/jugs

Board

Knife

Wooden spoon

Peeler

Steps: Burrito

Step 1: Dice onion and microwave 30 sec on high.

Step 2: Add chilli sauce, cornflour and light evaporated milk. Stir to combine.

Step 3: Microwave 1 minute.

Step 4: Dice chicken and fold through sauce.

Step 5: Warm burrito on paper towel, 30 seconds on high in microwave.

Step 6: Top burrito with lettuce, chicken mixture, tomato, avocado, and salsa or extra chilli sauce and then roll up and serve.

Salsa

Step 1: Wash coriander leaves then chop finely.

Step 2:  Peel and dice red onion finely.

Step 3: Combine all ingredients in a bowl and mix together with a wooden spoon or whiz them for 1 minute in a food processor. The texture should be a bit chunky. Traditionally the salsa ingredients were ground together in a pestle and mortar.
