Vanilla Bean Butter Biscuits

      Ingredients:

125g butter, softened

½ cup icing sugar

1 vanilla bean

1¼ cups plain flour

Cooks Tools:

Measuring cups

Sieve

Small bowl

Butter knife

Electric mixer

Sharp knife

Plastic wrap

Oven tray

Baking paper

Step 1: Place butter and sifted icing sugar in small bowl. Split vanilla bean; scrape seeds into bowl. Beat with electric mixer until light and fluffy; stir in sifted flour, in 2 batches.

Step 2: Knead dough on floured surface until smooth. Shape dough into 25cm rectangular log. Enclose log in plastic wrap about 30 minutes or until firm.

Step 3: Preheat oven to 180°C/160°C fan-forced. Grease oven trays; line with baking paper.

Step 4: Cut log into 1cm slices; place slices about 2cm apart on trays. Bake about 12 minutes. Cool on trays.
