Ingredients: Melting Moments
250g butter, softened
1 teaspoon vanilla extract
½ cup icing sugar
1½ cups plain flour
½ cup cornflour
Butter Cream:
90g butter, softened
¾ cup icing sugar
1 teaspoon finely grated lemon rind
1 teaspoon lemon juice
Step 1: Preheat oven to 160°C. Line oven trays with baking paper.
Step 2: Beat butter, extract and icing sugar in small bowl with electric mixer until light and fluffy. Transfer mixture to large bowl, stir in sifted flours in two batches.
Step 3: With floured hands, roll rounded teaspoons of mixture into balls; place about 2.5cm apart on trays. Flatten slightly with a floured fork.
Step 4: Bake biscuits about 15 minutes. Stand about 15 minutes before lifting onto wire racks to cool.
Step 5: Make butter cream.
Step 6: Sandwich biscuits with butter cream. Dust with extra sifted icing sugar before serving.

Beat butter, icing sugar and rind in small bowl with electric mixer until pale and fluffy; beat in juice.
