Winter has coming, it's time for Koreans to make kimchi to stock up for the next year. People who live in big cities, especially Seoul, rarely make kimchi traditionally. But middle-aged people, and people who live in small towns and villages still make it with mutual assistance. This tradition is called Kimjang, where neighbors help each other to make large quantities of kimchi.

For William Choi who grew up in America and then lived in Seoul, this was his first time participating in Kimjang. Today he took off his expensive clothes and branded accessories, wearing a long-sleeved wide t-shirt and ahjuma-style trousers. Don't forget a round hat to protect his handsome face from the sun. He doesn't look weird and embarrassing, he looks like a fashionista. His aura was indeed expensive, so even wearing shabby clothes, he still looked charming.

Will helps residents harvest the chicory, radishes and leeks grown in the greenhouse garden. Meanwhile Seol was soaking the anchovies to make a mixed stock of kimchi seasoning with some ahjuma.

All vegetables that have been harvested are transported using pick ups to be stored at the Hong Banjang business place. Every year, Gangjin residents make kimchi at Hong Banjang's house, which has the largest yard and large warehouse.

All the vegetables are then washed clean, then sprinkled with salt and allowed to stand until tomorrow morning to wilt. Since radishes wilt quickly, they are salted later.
