That's if you can even take it from her - which is very, very unlikely.
3rd Person P.O.V.
Prior to the fight, Steven drops the bloody sword - because he fights better without wielding a weapon. Steven and White Diamond both defensively attacked each other. First, Steven parries a quick fist at her, but she counters him by smacking his hand away and goes for a kick in the groin. However, Steven sways his leg to bat her leg away to retaliate and she backs away from him to avoid his devastating kick.
During this, anyone who was still awake watched them both fight - not daring to intervene. As much as White would love the assist, she doesn't want anyone to get hurt in the crossfire between the battle of these two. And, the more obvious factor, Rose could stop anyone from getting involved - her curiosity wanted her to see how this would play out.
As it was mentioned before, White knows all of Steven's tips and tricks for combat - she's been in his head multiple times to study them. However, this does not mean she could predict what he's going to do next. For instance, she knows he could do an Explosive Gel Cartwheel but he could also just throw a Freeze Blast at her instead.
Another factor to his unpredictability is his silence, and it makes White even more nervous than initially. Every other victim of Rose's mind-control maintained their personalities and still willing to bend over backwards for the sorceress, all the while they're aware of the situation.
Which means Steven is willingly being quiet during this fight, and it kinda scares her. Steven used to be playful and witty after he learned his lesson, which brought out a new Steven she didn't know she needed - basically a wholesome Steven. And what she liked the most was that Steven didn't go soft or weak after his development, he still remained to be the tough guy he is - just more open about himself.
But now... he's back to where he started. She wonders if Rose had something to do with it, or if it's something he's doing on his own.
Being brought back into the fight, White Diamond ducks to avoid the swing of his leg and he elegantly regains balance upon his foot touching the ground. Steven parried a fist, but White deflected and delivered a counterattack. Steven blocks the fist with his forearms and kicks her belly to push her back.
Steven raises his arms up, using the forearms as blockades to protect his head from White, in case she goes for the head.
Meanwhile, Rose watches and notices that Steven is switching techniques when fighting White Diamond. To which, she finds it fascinating - because it means that both of them are at a power struggle. She couldn't quite tell if he was holding back because he didn't want her to use his brute force skills against him or if he still has a soft spot for her, even during his hypnotized state.
