☼ Healthy Dinner ☼

This is also following on from my healthy breakfasts and my healthy lunches chapters. In this chapter I will be giving you some recipes on how to make the perfect, balanced, healthy dinner :) enjoy

Syn free salmon and asparagus pasta 25 minutes 4 portions
- 1 fish stock cube
- 1/2 a fish stock pot
- 2 large salmons
- 2 bunches of asparagus
- 1 onion
- 1 small handful of fresh parsley
- 1 large egg
- 1 egg yolk
- 1/2 a lemon (juice only)
- 400g of dried pasta
- 1 freshly ground black pepper
- 30g of pecorino cheese
- 4 tbsp of quark
- 400ml of water
- fry light

Pan seared cod in white wine tomato basil sauce 40 minutes serves 4
- 1 1/2 lbs of fresh cod
- 1/2 a cup of fresh basil
- 1 pint of cherry tomatoes
- 1/2 a tbsp of fresh zest lemon
- 2 tbsp of fresh lemon juice
- 1/4 tsp of freshly ground black pepper
- 1/2 tsp of red pepper flakes
- 1/2 tsp of salt
- salt and pepper
- 4 tbsp of olive oil
- 1/4 cup of dry white wine
- 2 large cloves of finely minced garlic

Turkey taco stuffed sweet potatoes 20 minutes gluten free serves 4
- 3/4 lb of lean ground turkey
- 2 tbsp of flat-leaf parsley
- 4 garlic cloves
- 1/2 tsp of dried oregano
- 2 medium sweet potatoes
- 1 1/4 cup of canned tomatoes
- 1/8 tsp of ground pepper
- 1/8 tsp of salt
- 1 tsp of chilli powder
- 1/2 tsp of paprika
- 1 tbsp of olive oil
- 1/4 tsp of ground cumin
- 1/4 a cup of grated pepper jack cheese

Healthy sweet and sour chicken 25 minutes serves 3-4 gluten free
- 3 boneless skinless chicken breasts
- 1 tsp of garlic powder
- 1 green bell pepper
- 1 red bell pepper
- 1/2 a white or yellow onion
- 1/4 cup of ketchup
- 2 tbsp of soy sauce
- 1/3 cup of cornstarch
- 1/2 tap of onion salt
- 3/4 cup of sugar
- 1/2 cup of apple cider vinegar
- 2 tbsp of oil

Syn free Mexican pasta bake 1 hour and 10 minutes gluten free vegetarian serves 4
- 450g of lean ground beef
- 1 tbsp of chilli powder
- 2 cloves of garlic
- 1 tin of kidney beans
- 1 small onion
- 1 tsp of oregano
- 480ml of stock
- 2 tbsp of tomato paste
- 250g of pasta
- 1/2 tsp of cayenne pepper
- 1 tsp of paprika
- 1 orange pepper
- 1 red pepper
- salt and black pepper
- olive oil spray
- 2 tsp of cumin powder
- 120g of cheddar
- 360ml of passata

Pesto tomato and mozzarella stuffed chicken breast 30 minutes serves 4 gluten free
- 4 chicken breasts
- 1/2 cup of fresh spinach
- 8 slices of tomato
- 10 tbsp of pesto
- salt and pepper
- 2 tbsp of olive oil
- 1/2 cup of greek yogurt
- 1 cup if grated mozzarella cheese

Grilled Hawaiian barbecue chicken in foil 25 minutes serves 4 gluten free
- 4 boneless skinless chicken breasts
- 1 tsp of garlic
- 1 green onion
- 1 15 ounce pineapple can
- 1 red bell pepper
- 2 medium zucchinis
- 1 cup of bbq sauce
- 2 tap of soy sauce

Syn free chicken tikka kebabs 40 minutes 4 kebabs
- 4 large chicken breasts
- 2 tap of ground coriander
- 1 tsp of garlic powder
- 1 tap of ground ginger
- 1 lemon (juice only)
- 1/4 tsp of black pepper
- 1/4 tap of cayenne pepper
- 2 drops of food colouring
- 2 tsp of garam masala
- 3 tsp of paprika
- 1 tsp of salt
- 2 tbsp of tikka seasoning mix
- 1/2 tsp of turmeric
- 2 tsp of ground cumin
- 3 tbsp 0% fat yogurt
