My theory is that Rose rejected being a diamond when she found out that they were going to build a kindergarten where there was life. She decided that instead of being one of the most valued gems she would become one of the most common types. Diamond is a highly sought for gem, while Quartz can be found almost everywhere. She didn't want gems to think that she was better than them,she wanted them to see her as their equal.
