"Okay so next we need to put the butter sticks into the saucepan, good job bunny..." I state praising my god-daughter as she sits next to me on the bench adding in things when I ask her to. "Now the syrup," her eyes light up and she eyes up the large tin of Golden Syrup.
"Ow many?" she questions in her deep Tennessee accent. I smile at her and ruffle her hair as I hold up two fingers and she smiles and dips the spoon in, the golden syrup sucks it in and she's not strong enough so her small hand soon follows. I let out a chuckle and she looks at me shocked. "You laugh, not nice." She claims as I help her rescue her hand and wipe it off as best I can but deciding that I'll let it get stickier before washing it.
As I scoop the golden syrup into the saucepan and set it on a low heat to melt Iris helps me measure out flour, baking soda, sugar and ginger powder. Once that's done I set it aside and she looks at me and I nod and she hands me a clean jug and the milk, I lift her off the bench and stand her on the stool that is in the kitchen, she sets the measuring jug on the bench and I help her to pour the milk up to the bright purple line that is painted on the side, she stops pouring when it's done and we put the milk away. "Eggies next..." she states and I smile and let her select two eggs, she cracks it with a little help from me and they fall into the milk where they're supposed to be. As I watch Iris stir the milk and eggs together I turn the butter and syrup off and leave it to cool. Once Iris is done with that she gets down and heads to the bathroom, turning the handle I sigh as a smear of golden syrup marks the door, not that it matters too much. I can clean it off. I hear her turn on the tap and then she says, "soapy, no bubbles..." I laugh and follow her inside the bathroom and push the soap pump towards her, "how many pumps do we use Iris?"
"One!" she screams at me but I look at her and she says, "free," I nod and pump the soap three times, "but it's three Iris, remember the 'th'," she nods but I know it makes no sense to her. I help her dry off her hands and then I scoop her into my arms. She's so light and cute so I don't object when she hugs me and kisses my cheek. "Now," Iris says as I pour the milk and egg mixture into the butter and golden syrup liquid that has cooled. She watches as I whip it with the whisk so it's a golden brown colour. "What now Iris?"
"Flour," she simply states and moves on the island so she's near the flour, sugar, baking soda and ginger mixture. I watch her dip her hand in and make a well in the middle. I pour it and begin to fold the mixture together and Iris continues to admire what I'm doing. But that soon changes as I lay the mixture in the muffin tins and then the door shuts and two distinct voices come towards the kitchen, making my eyes drop to Iris whose eyes are bright and she takes off towards them. The voices aren't arguing or anything which makes a change as they've been fighting more than normal but I place the muffins in the oven for 20 minutes. Iris reappears and I see my best friend holding her close. I open my mouth but she says, "not now. Everything is fine. I just need some time with my best friend and baby girl." I nod and say nothing as she sets Iris down and Iris goes and plants herself in front of the oven watching the muffins rise.
I sit down with my best friend and we discuss the therapy session and she says, "it's like I'm not being understood. It's only been a few months since Carlton died, I don't want to try again so quick." I nod and say, "completely understandable I can't believe that's the expectation maybe you need some time. Take Iris and go away," I say but she shakes her head.
"No I'd never be allowed to take Iris away for that long. I guess I'll have to hope therapy works." I nod sympathetically and we talk until the timer goes off for the muffins, pulling them out I grab one and set it in the fridge for Iris to eat in five minutes. Iris is now back with her mommy and cuddling close. I point to the fridge and Iris nods, as I go to say something Iris' eyes light up and she rushes past me yelling, "mama! Where you go?" I turn and see my best friend's wife with a suitcase in hand. "I'm going away to Paris munchkin, I'll be back soon." Iris' face drops as she walks back to me. I watch as my best friend rises up and looks at me, "Ella, can you take Iris to the park. I think Karlie and I need to talk." I nod and take Iris who comes willingly but looks back at her mommy and mama and then whispers, "bye mama have good trip..."

Hannah's Ginger Muffin Recipe
2 Cups of Flour
1 teaspoon of Baking Soda
2 teaspoons of Ground Ginger
1 Cup of Sugar, (caster/fine sugar works best)
100 grams of Butter
2 tablespoons of Golden Syrup
1 Cup of Milk
2 Eggs
1. Sift first set of ingredients together into a bowl that can be poured
2. Melt butter and golden syrup in a saucepan until combined then remove from heat and allow to cool.
3. Combine milk and eggs together, mix up and then add to butter and golden syrup mixture whisking as you do.
4. Make a well in the middle of the dry ingredients and add the liquid. Fold mixture to mix DO NOT WHISK. The mixture will seem runnier than a normal muffin mixture, this is normal. DO NOT ADD MORE FLOUR.
5. Spray a muffin pan (you may need two 12 hole pans) and then add the mixture to it. Bake at 200 degrees for 20 minutes or until the muffins spring back when pressed in the middle.
