"Rejoice always...in everything give thanks; for this is the will of God in Christ Jesus for you." ~I Thessalonians 5:16‭, ‬18

"When His disciples heard it, they were greatly astonished, saying, “Who then can be saved?” But Jesus looked at them and said to them, “With men this is impossible, but with God all things are possible.” ~Matthew 19:25‭-‬26

How can we possibly rejoice in ALL ways and give thanks in EVERY thing?

If God should "give you the desires of our heart" [Psalm 37:4], you can rejoice and give thanks.
And if He withholds those desires, you can still rejoice and give thanks for (and because of) the strength of grace: That He has provided to enable you to be content in all things...and the strength of hope: That He is Faithful & True.

(Several of many passages on) THE STRENGTH OF GRACE [*Psalm 84:11] "I know how to be abased, and I know how to abound. Everywhere and in all things I have learned both to be full and to be hungry, both to abound and to suffer need. I can do all things through Christ who strengthens me." ~Philippians 4:12‭-‬13
But now, thus says the Lord , who created you, O Jacob, And He who formed you, O Israel: “Fear not, for I have redeemed you; I have called you by your name; You are Mine. When you pass through the waters, I will be with you; And through the rivers, they shall not overflow you. When you walk through the fire, you shall not be burned, Nor shall the flame scorch you. For I am the Lord your God, The Holy One of Israel, your Savior..." ~Isaiah 43:1‭-‬3

(Several of many passages on) THE STRENGTH OF HOPE [*Romans 5:5]: "And Jesus said to them, “I am the bread of life. He who comes to Me shall never hunger, and he who believes in Me shall never thirst." ~John 6:35
"You, O God, who have shown me great and severe troubles, Shall revive me again, And bring me up again from the depths of the earth. You shall increase my greatness, And comfort me on every side." ~Psalms 71:20‭-‬21
